Happy Cakes

We had a birthday this week. My oldest girl turned 2. We celebrated with some "happy cakes" and a trip to her favorite restaurant. The happy cakes (or cupcakes as they're known by many) were pretty easy to whip up. I bought some vanilla Betty Crocker cake mix and made the frosting by mixing a package of cream cheese and a bag of powdered sugar. I added those food color gels which worked brilliantly. In Japan you have to go to the "gourmet" shop to buy Betty Crocker mix, so these are a rare treat around here. Thanks Sis for the icing recipe.
