Quick No-bake Pecan Bourbon Balls
December can be such a warm and joyful time of year. But it's also a very busy month. My calendar is marked with the usual book club and birthday party gatherings and also a few holiday parties, one of which I'm hosting. These no-bake pecan bourbon balls make perfect party food. They're not only tasty, but quick and easy to make. No baking required. You can whip up a batch in less time than it takes to preheat the oven.
Recipe (makes 18)
28 Nilla wafers
2 tablespoons cocoa powder
1 cup pecans
2 tablespoons dark corn syrup
2 tablespoons bourbon or bourbon extract
1 tablespoon sugar
powdered sugar for covering
Directions
Pulse all ingredients, except powdered sugar, together in a food processor. For each cookie, scoop a tablespoon out and shape into a ball. Roll in powdered sugar and serve.
